That said, people do still run dungeons for various reasons. There's no reason you can't, especially if there's some dungeon gear you want. Other than that, the game pretty much begins at level 80, since 1-79 is basically just an extended tutorial these days. If you're a new player with a fresh 80, here's a short list of stuff to do:

Even thought I am 80 with full Ascended gear, I still find teh content fun and engaging, even in the "starter zones." The other piece of advice is to join a good guild if you haven't already. They can help you with the harder stuff, and they come in handy at the end of your Personal Story when you have to do the story instance of Arah.Ascended weapons provide the most notes per salvage process. You can alter the non-standard ones in the Mystic Forge to make them salvageable with a Research Kit.
